Description

Ingredients

  • 1 lb lean ground beef
  • 8 flour or corn tortillas
  • 2 cups enchilada sauce (store-bought or homemade)
  • 1 cup shredded cheddar or Monterey Jack cheese
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • Sour cream (for topping)


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet over medium heat, brown the ground beef along with the diced onions until the onions become translucent (around 5-7 minutes).
  3. Stir in minced garlic, cumin, and chili powder. Sauté for an additional minute to let the flavors meld.
  4. Spoon the beef mixture onto each tortilla, roll them tightly, and place seam-side down in a greased baking dish.
  5. Pour the enchilada sauce generously over the rolled tortillas, ensuring they’re well-covered. Sprinkle the shredded cheese on top.
  6. Bake uncovered in the preheated oven for about 20-25 minutes, or until bubbly and golden.

Notes

For a lighter version, swap the tortillas for gluten-free options or use turkey or black beans instead of beef.
