Ingredients
- 1 pound shrimp, peeled and deveined
- 2 tablespoons olive oil
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- Salt and pepper, to taste
- 8 small corn tortillas
- 1 ripe mango, diced
- 1/2 red onion, diced
- 1 jalapeño, minced (adjust to your spice preference)
- 1/4 cup fresh cilantro, chopped
- Juice of 1 lime
Instructions
- Toss the shrimp with olive oil, chili powder, cumin, salt, and pepper until well-coated.
- Preheat your grill or grill pan over medium-high heat.
- Grill the shrimp for about 2-3 minutes on each side, or until they turn pink and are fully cooked.
- Mix the diced mango, red onion, jalapeño, cilantro, and lime juice in a separate bowl to create the mango salsa.
- Warm the corn tortillas on the grill or in a heated pan until they are pliable.
