Ingredients

  • 1 pound shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • Salt and pepper, to taste
  • 8 small corn tortillas
  • 1 ripe mango, diced
  • 1/2 red onion, diced
  • 1 jalapeño, minced (adjust to your spice preference)
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime


Instructions

  1. Toss the shrimp with olive oil, chili powder, cumin, salt, and pepper until well-coated.
  2. Preheat your grill or grill pan over medium-high heat.
  3. Grill the shrimp for about 2-3 minutes on each side, or until they turn pink and are fully cooked.
  4. Mix the diced mango, red onion, jalapeño, cilantro, and lime juice in a separate bowl to create the mango salsa.
  5. Warm the corn tortillas on the grill or in a heated pan until they are pliable.
  6. Assemble tacos by placing a few grilled shrimp in each tortilla and topping generously with mango salsa.
