Juicy and flavorful grilled shrimp skewers marinated in a bright lemon and herb dressing, perfect for summer cookouts.
Ingredients
- 1 pound large shrimp, peeled and deveined
- Wooden or metal skewers
- 3 tablespoons olive oil
- 2 tablespoons fresh lemon juice
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 1 teaspoon dried oregano
- ½ teaspoon paprika
- ½ teaspoon garlic powder
- Chopped fresh parsley for garnish
- Lemon slices for serving
Instructions
- Make the marinade: In a large bowl, combine olive oil, lemon juice, salt, black pepper, oregano, paprika, and garlic powder. Whisk until well combined.
- Prep the shrimp: Pat the shrimp completely dry with paper towels.
- Marinate the shrimp: Add shrimp to the marinade and toss to coat. Cover and refrigerate for at least 15 minutes, but no longer than 2 hours.
- Prepare skewers: Soak wooden skewers for 30 minutes if using, otherwise use metal skewers directly.
- Thread the shrimp onto skewers, 4 to 6 per skewer.
- Heat and grease the grill to medium-high heat.
- Grill the first side for 2-3 minutes until pink and marked.
- Flip and grill the second side for another 2-3 minutes until completely opaque and cooked through.
- Serve warm, garnished with parsley and lemon slices.
Notes
Store leftovers in an airtight container for up to 3 days. Can be reheated gently or enjoyed cold in salads.
