Description

A vibrant and healthy grilled shrimp bowl featuring seasoned shrimp, sweet corn salsa, creamy avocado, and a luscious garlic sauce.


Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • ½ teaspoon garlic powder
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon cayenne pepper, optional
  • 1 cup frozen corn, thawed
  • ½ cup red onion, diced
  • ¼ cup fresh cilantro, chopped
  • 1 jalapeño, seeded and minced, optional
  • 1 lime, juiced
  • Salt to taste
  • ½ cup mayonnaise
  • ¼ cup sour cream
  • 1 tablespoon fresh cilantro, chopped
  • 1 tablespoon fresh lemon juice
  • 1 clove garlic, minced
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 avocado, sliced, cubed, or mashed
  • Sesame seeds for garnish
  • Green onions, chopped, for garnish


Instructions

  1. Season the shrimp by combining them with olive oil, paprika, garlic powder, salt, black pepper, and cayenne pepper in a medium bowl. Toss until evenly coated and set aside.
  2. Prepare the corn salsa by mixing thawed corn, diced red onion, cilantro, jalapeño (if using), lime juice, and salt in a separate bowl. Mix gently and set aside.
  3. Make the creamy garlic sauce by whisking together mayonnaise, sour cream, cilantro, lemon juice, minced garlic, salt, and black pepper in a small bowl until smooth. Set aside.
  4. Grill the seasoned shrimp on medium heat for 2 to 3 minutes on each side until cooked through and opaque.
  5. Assemble the bowls by layering corn salsa as a base, topping with grilled shrimp and avocado. Drizzle with creamy garlic sauce and garnish with sesame seeds and green onions.

Notes

For meal prep, refrigerate components separately. The shrimp can be frozen for up to 2 months.
