Description
A delicious and hearty vegetable lasagna layered with fresh vegetables and ricotta cheese, baked to perfection.
Ingredients
- 9 lasagna noodles
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 zucchini, sliced
- 1 bell pepper, chopped
- 2 cups spinach
- 2 cups ricotta cheese
- 2 cups marinara sauce
- 2 cups shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Preheat the oven to 375°F (190°C).
- Cook the lasagna noodles according to package instructions; drain and set aside.
- Heat olive oil in a skillet over medium heat, add onion and garlic, and sauté until fragrant.
- Add the zucchini, bell pepper, and spinach; cook until softened.
- Mix ricotta cheese, oregano, salt, and pepper in a bowl.
- Spread a thin layer of marinara sauce on the bottom of a 9×13 inch baking dish.
- Layer 3 lasagna noodles over the sauce, then spread half of the ricotta mixture over the noodles.
- Add half of the sautéed vegetables and one-third of the mozzarella cheese.
- Repeat the layers and top with remaining noodles, marinara sauce, mozzarella, and Parmesan cheese.
- Bake for 30-35 minutes until bubbly and golden brown.
- Let it cool for 10 minutes before serving.
Notes
For extra flavor, add your favorite herbs to the vegetable mixture.
