Ingredients
- 1 pound salmon fillets, cut into cubes
- 1 red bell pepper, cut into chunks
- 1 green bell pepper, cut into chunks
- 1 medium onion, cut into chunks
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Wooden skewers (soaked in water for 30 minutes if using)
Instructions
- Preheat the grill to medium-high heat.
- Combine olive oil, lemon juice, garlic powder, salt, and pepper in a large bowl.
- Add the salmon cubes and vegetables to the bowl and toss to coat.
- Thread the salmon and vegetables onto skewers, alternating between salmon and veggies.
- Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the salmon is cooked through and flakes easily.
- Serve hot.
