Description
Delicious grilled jerk shrimp and sweet pineapple skewers, perfect for summer barbecues and quick weeknight meals.
Ingredients
- 1 pound (20-25 or 16-20) shrimp, peeled and deveined
- 1/2 cup jerk marinade (store-bought or homemade)
- 2 slices of pineapple, cut into 1/2-inch pieces
Instructions
- Marinate the shrimp: In a bowl, combine the shrimp and half of the jerk marinade, ensuring each piece is well coated. Let it marinate for at least 20 minutes or up to overnight for deeper flavor.
- Prepare the skewers: Thread the marinated shrimp and pineapple pieces onto skewers, alternating between the two for an aesthetically pleasing presentation.
- Preheat the grill: Set your grill to medium-high heat. Once hot, lightly oil the grates to prevent sticking.
- Grill the skewers: Place the skewers on the grill and cook for about 2-3 minutes on each side, or until the shrimp is opaque and cooked through.
- Serve hot: Remove from the grill and enjoy immediately!
Notes
For a tropical twist, consider serving on coconut rice, pairing with fresh salad, or adding lime juice just before serving.
