Ingredients

  • 4 boneless chicken breasts
  • 1 cup cream cheese, softened
  • 1 cup shredded mozzarella cheese
  • 1 cup bell peppers, diced
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • Fresh parsley for garnish


Instructions

  1. Preheat the grill to medium heat.
  2. Combine cream cheese, mozzarella cheese, diced bell peppers, garlic, salt, pepper, and paprika in a mixing bowl.
  3. Slice pockets in the chicken breasts horizontally, being careful not to cut through completely.
  4. Stuff the chicken pockets generously with the cheese and pepper mixture.
  5. Secure openings with toothpicks if necessary.
  6. Brush the exterior of the chicken with olive oil and sprinkle with additional salt and pepper.
  7. Grill each piece for about 6-7 minutes per side, until fully cooked and juices run clear.
  8. Let the chicken rest for a few minutes before garnishing with fresh parsley and serving.
