Ingredients
- 4 boneless chicken breasts
- 1 cup cream cheese, softened
- 1 cup shredded mozzarella cheese
- 1 cup bell peppers, diced
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
- 1 teaspoon paprika
- Fresh parsley for garnish
Instructions
- Preheat the grill to medium heat.
- Combine cream cheese, mozzarella cheese, diced bell peppers, garlic, salt, pepper, and paprika in a mixing bowl.
- Slice pockets in the chicken breasts horizontally, being careful not to cut through completely.
- Stuff the chicken pockets generously with the cheese and pepper mixture.
- Secure openings with toothpicks if necessary.
- Brush the exterior of the chicken with olive oil and sprinkle with additional salt and pepper.
- Grill each piece for about 6-7 minutes per side, until fully cooked and juices run clear.
- Let the chicken rest for a few minutes before garnishing with fresh parsley and serving.
