Ingredients

  • 4 boneless, skinless chicken breasts
  • 4 slices of ham
  • 4 slices of Swiss cheese
  • Salt and pepper to taste
  • Olive oil (for brushing the chicken)
  • 1/4 cup olive oil (for the vinaigrette)
  • 1 tablespoon honey
  • 1 tablespoon red wine vinegar
  • 1/4 cup Dijon mustard
  • 1 teaspoon Dijon mustard (for extra punch)
  • Salt and pepper (for vinaigrette)


Instructions

  1. Preheat the grill to medium-high heat.
  2. Cut a pocket into each chicken breast without slicing all the way through.
  3. Stuff each pocket with ham and Swiss cheese, securing if needed.
  4. Season the chicken with salt and pepper, then brush lightly with olive oil.
  5. Whisk together the Dijon vinaigrette ingredients in a bowl.
  6. Grill the chicken for about 6–7 minutes per side until fully cooked.
  7. Rest the chicken for 5 minutes before slicing and drizzle with vinaigrette.

Notes

Swiss cheese can be substituted with Gruyère or provolone. A slightly thicker-cut ham provides better texture on the grill.
