Description
A flavorful marinade for juicy grilled chicken made with pantry staples, perfect for meal prep and easy to scale.
Ingredients
- 1/4 cup olive oil
- 2 tablespoons soy sauce
- 2 tablespoons balsamic vinegar
- 2 tablespoons lemon juice
- 2 garlic cloves, minced
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Whisk together the olive oil, soy sauce, balsamic vinegar, lemon juice, minced garlic, oregano, salt, and black pepper until well combined.
- Place chicken in a resealable plastic bag or a shallow dish. Pour the marinade over it and turn to coat thoroughly.
- Seal or cover, then refrigerate for at least 1 hour (up to overnight for best flavor).
- Heat the grill to medium-high and oil the grates to prevent sticking.
- Remove chicken from the marinade and throw away the leftover marinade.
- Cook chicken on the grill for about 6–7 minutes per side, until fully cooked.
- Let the chicken rest for 3–5 minutes before serving or slicing.
Notes
Refrigerate cooked chicken in an airtight container for up to 4 days. Use leftovers in salads, bowls, wraps, or sandwiches.
