Description

This grilled chicken breast, topped with a vibrant chimichurri sauce, is perfect for summer nights and quick weeknight dinners.

Ingredients

  • 4 chicken breasts
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1/2 cup fresh parsley, chopped
  • 1/4 cup fresh cilantro, chopped
  • 2 cloves garlic, minced
  • 1/4 teaspoon red pepper flakes
  • 1/4 cup red wine vinegar
  • 1/2 cup olive oil

Instructions

  1. Preheat your grill to medium-high heat.
  2. Coat the chicken breasts with olive oil, then season generously with salt and pepper.
  3. Place the chicken on the grill, cooking for 6-7 minutes on each side, or until the internal temperature reaches 165°F.
  4. In a mixing bowl, combine parsley, cilantro, garlic, red pepper flakes, red wine vinegar, and olive oil to create the chimichurri sauce.
  5. Once the chicken is grilled, remove it from the heat and let it rest for a few minutes before slicing.
  6. Serve the grilled chicken breasts generously topped with the chimichurri sauce.

Notes

Marinate the chicken for a few hours or overnight for deeper flavor. Store leftovers in an airtight container in the refrigerator for up to 3 days.
