Ingredients
- 1 cup long-grain white rice
- 2 cups chicken or vegetable broth
- 1 can (4 oz) chopped green chiles
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- Salt to taste
- Fresh cilantro for garnish (optional)
Instructions
- Heat olive oil in a saucepan over medium heat. Sauté the diced onion and minced garlic until they become translucent.
- Add the rice and stir for about 2 minutes to lightly toast it.
- Pour in the chicken or vegetable broth, then add the chopped green chiles.
- Bring to a rolling boil, then reduce the heat to low. Cover and let simmer for 15-20 minutes, or until the rice is tender.
- Fluff the rice with a fork, season with salt to taste, and garnish with fresh cilantro if desired.
Notes
Rinse the rice before cooking for fluffier results. Adjust the spiciness by using mild or hot green chiles.
