Ingredients
- 2 cups cooked chicken, shredded
- 8 oz cream cheese, softened
- 1 can (4 oz) diced green chiles
- 1 cup enchilada sauce
- 1 cup shredded cheese (cheddar or Monterey Jack)
- 8 flour tortillas
- Olive oil
- Optional toppings: sour cream, green onions, cilantro
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, mix the shredded chicken, cream cheese, and diced green chiles until well combined.
- Warm the tortillas in the microwave for about 20 seconds; this will make them more pliable.
- Place a generous spoonful of the filling onto each tortilla. Roll them tightly and place them seam-side down in a greased baking dish.
- Pour enchilada sauce generously over the tortillas, ensuring they’re well covered.
- Sprinkle the shredded cheese on top and bake for 20-25 minutes or until bubbly and golden.
- Serve immediately with your favorite toppings!
Notes
Feel free to substitute rotisserie chicken for cooked chicken or use a dairy-free cream cheese for a lighter option.
