Description

Delicious Green Chile Chicken Enchiladas wrapped in soft tortillas, filled with tender shredded chicken, creamy cheese, and green chiles, baked to perfection.


Ingredients

  • 2 cups cooked chicken, shredded
  • 8 oz cream cheese, softened
  • 1 can (4 oz) diced green chiles
  • 1 cup enchilada sauce
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 8 flour tortillas
  • Olive oil
  • Optional toppings: sour cream, green onions, cilantro


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix the shredded chicken, cream cheese, and diced green chiles until well combined.
  3. Warm the tortillas in the microwave for about 20 seconds; this will make them more pliable.
  4. Place a generous spoonful of the filling onto each tortilla. Roll them tightly and place them seam-side down in a greased baking dish.
  5. Pour enchilada sauce generously over the tortillas, ensuring they’re well covered.
  6. Sprinkle the shredded cheese on top and bake for 20-25 minutes or until bubbly and golden.
