Comforting Green Chile Chicken Enchiladas featuring tender chicken, zesty green chiles, and gooey cheese wrapped in soft tortillas.
Ingredients
- 2 cups cooked, shredded chicken
- 1 can (7 oz) diced green chiles
- 1 cup sour cream
- 2 cups shredded cheese (cheddar or pepper jack)
- 10 corn tortillas
- 1 can (10 oz) enchilada sauce
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- Combine the shredded chicken, green chiles, sour cream, garlic powder, onion powder, salt, and pepper in a mixing bowl.
- Spread a small amount of enchilada sauce on the bottom of a baking dish.
- Fill each tortilla with the chicken mixture, roll it up tightly, and place it seam side down in the baking dish.
- Pour the remaining enchilada sauce over the rolled tortillas and sprinkle with the shredded cheese.
- Bake in the preheated oven for 20-25 minutes, or until heated through and the cheese is bubbly.
- Serve warm and enjoy!
