Description

Comforting Green Chile Chicken Enchiladas featuring tender chicken, zesty green chiles, and gooey cheese wrapped in soft tortillas.


Ingredients

  • 2 cups cooked, shredded chicken
  • 1 can (7 oz) diced green chiles
  • 1 cup sour cream
  • 2 cups shredded cheese (cheddar or pepper jack)
  • 10 corn tortillas
  • 1 can (10 oz) enchilada sauce
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Combine the shredded chicken, green chiles, sour cream, garlic powder, onion powder, salt, and pepper in a mixing bowl.
  3. Spread a small amount of enchilada sauce on the bottom of a baking dish.
  4. Fill each tortilla with the chicken mixture, roll it up tightly, and place it seam side down in the baking dish.
  5. Pour the remaining enchilada sauce over the rolled tortillas and sprinkle with the shredded cheese.
  6. Bake in the preheated oven for 20-25 minutes, or until heated through and the cheese is bubbly.
  7. Serve warm and enjoy!

Notes
