A delightful Greek-inspired pasta salad with cheese-filled tortellini, fresh veggies, and a zesty dressing, perfect for meal prep or potlucks.
Ingredients
- 8 oz cheese-filled tortellini
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 red onion, finely chopped
- 1 bell pepper, chopped
- 3 oz feta cheese, crumbled
- 1/4 cup fresh herbs (parsley or oregano)
- 1/4 cup olive oil
- 2 tbsp lemon juice
- 2 tbsp red wine vinegar
- 2 cloves garlic, minced
- Salt and pepper to taste
Instructions
- Cook the tortellini in a pot of salted boiling water according to package directions until just tender.
- Drain the tortellini and cool to room temperature.
- Combine the salad base in a large bowl: add cherry tomatoes, cucumber, red onion, bell peppers, and feta.
- Whisk together olive oil, lemon juice, red wine vinegar, minced garlic, salt, and pepper in a small bowl until emulsified.
- Toss the cooled tortellini with the salad base and pour the dressing over. Toss gently until well combined.
- Garnish with fresh herbs just before serving.
Notes
The salad can be made ahead of time. For best flavor, add fresh herbs right before serving.
