Description

A vibrant Mediterranean-inspired dish bursting with fresh flavors, perfect for summer gatherings.

Ingredients

  • 12 ounces of pasta (rotini or penne)
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, finely chopped
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Cook the pasta: Begin by boiling a large pot of salted water. Add the pasta and cook according to package instructions until al dente. Drain the pasta and let it cool.
  2. Prep the vegetables: While the pasta is cooking, chop your tomatoes, cucumber, and red onion. Slice the olives and crumble the feta cheese.
  3. Make the dressing: In a small bowl, whisk together olive oil, red wine vinegar, oregano, salt, and pepper.
  4. Combine ingredients: In a large bowl, combine the cooled pasta with the chopped vegetables, olives, feta cheese, and parsley. Drizzle the dressing over the top and toss gently to combine.
  5. Taste and adjust: Check for seasoning and adjust salt and pepper as needed.
  6. Chill: For the best flavor, refrigerate the salad for about an hour before serving.

Notes

Use fresh ingredients for the best flavor. Allow salad to chill for enhanced taste.
