Description

These Greek Chicken Bowls are a perfect weeknight meal, loaded with vibrant flavors and fresh ingredients. Easy to make and great for meal prep, these bowls are a healthy, customizable dish that your whole family will love.


Ingredients

  • 4 small chicken breasts (about 1 1/4 pounds)
  • ¼ cup olive oil
  • 1 tablespoon lemon zest
  • 2 tablespoons lemon juice
  • 2 tablespoons honey
  • 1 teaspoon garlic powder
  • 1 ½ teaspoons dried oregano
  • 1 ½ teaspoons dried basil
  • 1 teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon red pepper flakes
  • 2 cups cooked rice or quinoa
  • 2 cups halved grape or cherry tomatoes
  • 2 cups diced or chopped cucumber
  • 4 cups shredded romaine lettuce
  • 1 cup sliced red onion
  • ½ cup feta (optional, or substitute with dairy-free feta)
  • 1 cup plain Greek yogurt (or dairy-free Greek yogurt)
  • ½ cup grated cucumber
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil
  • 1 teaspoon minced garlic
  • ¼ teaspoon salt (or to taste)
  • 1 tablespoon fresh chopped dill


Instructions

  1. Whisk together all ingredients for the chicken marinade. Pound the chicken to about ½ inch thick and place in a shallow bowl or ziplock bag with the marinade. Let marinate for at least 30 minutes, or up to a few hours.
  2. While the chicken is marinating, combine all the tzatziki ingredients and set aside.
  3. Preheat your air fryer to 380°F. Air fry the chicken on one side for 7 minutes, then flip and cook for another 3-4 minutes, or until the internal temperature reaches 165°F. If you don’t have an air fryer, heat a skillet with oil or butter over medium/low heat and fry the chicken for 7-8 minutes per side until golden and cooked through.
  4. While the chicken is resting, assemble the bowls by adding a base of rice or quinoa, then top with tomatoes, cucumber, shredded romaine, sliced red onion, and feta. Slice the cooked chicken and place on top of the veggies.
  5. Drizzle homemade tzatziki over the chicken and veggies, and add a drizzle of olive oil and lemon juice for extra flavor.
  6. Serve the bowls immediately and enjoy this flavorful, fresh meal!

Notes

You can substitute cauliflower rice for a low-carb option. Use dairy-free Greek yogurt and omit feta to make this recipe dairy-free. Marinate the chicken and prepare the tzatziki the night before to save time.
