A delightful combination of sweetness and savory goodness, this Sweet Hawaiian Chicken is easy to prepare in a crockpot for busy weeknights or gatherings.
Ingredients
- 2 pounds boneless, skinless chicken thighs
- 1 cup pineapple juice (preferably 100% juice)
- 1/2 cup soy sauce
- 1/4 cup brown sugar
- 1 tablespoon minced garlic
- 1 tablespoon minced ginger
- 1 can (20 oz) pineapple chunks, drained
- Bell peppers, sliced (for garnish)
- Green onions, chopped (for garnish)
Instructions
- Place chicken thighs in the crockpot.
- In a bowl, combine pineapple juice, soy sauce, brown sugar, garlic, and ginger. Mix well.
- Pour the sauce over the chicken, and add the pineapple chunks.
- Cover and cook on low for 6-8 hours or high for 3-4 hours, until the chicken is tender.
- Shred the chicken just before serving and mix it back into the sauce.
Notes
Marinate the chicken overnight for extra flavor. Customize vegetables and adjust sauce thickness as desired.
