A delightful combination of sweetness and savory goodness, this Sweet Hawaiian Chicken is easy to prepare in a crockpot for busy weeknights or gatherings.


Ingredients

  • 2 pounds boneless, skinless chicken thighs
  • 1 cup pineapple juice (preferably 100% juice)
  • 1/2 cup soy sauce
  • 1/4 cup brown sugar
  • 1 tablespoon minced garlic
  • 1 tablespoon minced ginger
  • 1 can (20 oz) pineapple chunks, drained
  • Bell peppers, sliced (for garnish)
  • Green onions, chopped (for garnish)


Instructions

  1. Place chicken thighs in the crockpot.
  2. In a bowl, combine pineapple juice, soy sauce, brown sugar, garlic, and ginger. Mix well.
  3. Pour the sauce over the chicken, and add the pineapple chunks.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours, until the chicken is tender.
  5. Shred the chicken just before serving and mix it back into the sauce.
