A nostalgic and delightful rhubarb crisp with a buttery, crumbly topping.
Ingredients
- 8 cups rhubarb, cut into 3/4-inch pieces
- 1/2 cup white sugar
- 1/4 cup flour
- 1/2 teaspoon cinnamon
- 1 cup flour (for topping)
- 3/4 cup brown sugar
- 1/2 cup rolled oats
- 1/2 cup melted butter
Instructions
- Preheat the oven to 350°F (175°C).
- Combine rhubarb, white sugar, 1/4 cup of flour, and cinnamon in a mixing bowl. Stir until well coated and pour into a greased baking dish.
- Mix together 1 cup of flour, brown sugar, oats, and melted butter in another bowl until crumbly.
- Sprinkle the topping evenly over the rhubarb mixture.
- Bake for 35 minutes or until the topping is golden and the rhubarb is bubbling.
- Let it cool for a few minutes before serving.
Notes
Serve warm with vanilla ice cream or caramel sauce. Substitute rhubarb with apples or strawberries if needed.
