Description

A nostalgic and delightful rhubarb crisp with a buttery, crumbly topping.


Ingredients

  • 8 cups rhubarb, cut into 3/4-inch pieces
  • 1/2 cup white sugar
  • 1/4 cup flour
  • 1/2 teaspoon cinnamon
  • 1 cup flour (for topping)
  • 3/4 cup brown sugar
  • 1/2 cup rolled oats
  • 1/2 cup melted butter


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Combine rhubarb, white sugar, 1/4 cup of flour, and cinnamon in a mixing bowl. Stir until well coated and pour into a greased baking dish.
  3. Mix together 1 cup of flour, brown sugar, oats, and melted butter in another bowl until crumbly.
  4. Sprinkle the topping evenly over the rhubarb mixture.
  5. Bake for 35 minutes or until the topping is golden and the rhubarb is bubbling.
  6. Let it cool for a few minutes before serving.

Notes

Serve warm with vanilla ice cream or caramel sauce. Substitute rhubarb with apples or strawberries if needed.
