Ingredients
- 1 box yellow cake mix
- 1 can crushed pineapple in juice (20 oz)
- 1 can pineapple rings in juice (20 oz)
- Eggs (as per the box instructions)
- Oil (as per the box instructions)
- Pineapple juice (to replace the water in the box)
- Maraschino cherries
- 1 cup brown sugar
- ½ cup butter
Instructions
- Preheat your oven to 350°F.
- Drain the crushed pineapple and set aside the juice.
- Melt the butter in a skillet, then remove it from heat and mix in the brown sugar. Let it cool slightly.
- Spread the brown sugar mixture evenly around the skillet’s bottom and up the sides.
- Line the skillet with pineapple rings, ensuring that the bottom and sides are well covered. Place a maraschino cherry in the center of each ring.
- Prepare the cake mix according to the box instructions—substituting water with reserved pineapple juice. Stir in the crushed pineapple until well combined.
- Pour the batter slowly over the fruit, taking care not to disturb the pineapple arrangement. Smooth out the top with a spatula.
- Bake until a toothpick inserted in the center comes out clean, approximately 75 minutes.
- Allow the cake to cool for 5-10 minutes, then carefully flip it onto a serving plate.
