Description

Soft, gooey muffins filled with a luscious cream cheese center and infused with cinnamon and brown sugar.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1 cup milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 8 oz cream cheese, softened
  • 1/2 cup brown sugar
  • 1 tablespoon ground cinnamon


Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a mixing bowl, whisk together the flour, sugar, baking powder, and salt until combined.
  3. In a separate bowl, mix the melted butter, milk, eggs, and vanilla until smooth.
  4. Pour the wet ingredients into the dry ingredients and stir gently until just combined; do not over-mix!
  5. In another bowl, blend the softened cream cheese, brown sugar, and cinnamon until creamy and smooth.
  6. Fill each muffin liner halfway with batter. Add a generous dollop of the cream cheese mixture on top, followed by more muffin batter to cover.
  7. Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted comes out clean.
  8. Allow the muffins to cool for a few minutes before savoring their gooey goodness!

Notes

Consider adding powdered sugar for garnish and serving with a side of fruit.
