Description
Soft, gooey muffins filled with a luscious cream cheese center and infused with cinnamon and brown sugar.
Ingredients
- 2 cups all-purpose flour
- 1 cup sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, melted
- 1 cup milk
- 2 large eggs
- 1 teaspoon vanilla extract
- 8 oz cream cheese, softened
- 1/2 cup brown sugar
- 1 tablespoon ground cinnamon
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a mixing bowl, whisk together the flour, sugar, baking powder, and salt until combined.
- In a separate bowl, mix the melted butter, milk, eggs, and vanilla until smooth.
- Pour the wet ingredients into the dry ingredients and stir gently until just combined; do not over-mix!
- In another bowl, blend the softened cream cheese, brown sugar, and cinnamon until creamy and smooth.
- Fill each muffin liner halfway with batter. Add a generous dollop of the cream cheese mixture on top, followed by more muffin batter to cover.
- Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted comes out clean.
- Allow the muffins to cool for a few minutes before savoring their gooey goodness!
Notes
Consider adding powdered sugar for garnish and serving with a side of fruit.
