Ingredients
- ¾ cup unsalted butter, softened
- 1 cup granulated sugar
- 1 egg
- ¼ cup molasses
- 2½ cups all-purpose flour
- 2 tsp baking soda
- ½ tsp salt
- 1 tsp cinnamon
- ½ tsp ground ginger
Instructions
- Preheat oven to 350°F (175°C).
- Cream butter and sugar until fluffy.
- Beat in egg and molasses.
- Whisk flour, baking soda, salt, cinnamon, and ginger separately.
- Mix dry and wet ingredients until dough forms.
- Scoop dough, roll into balls, and bake for 10–12 min—edges should set but centers remain soft.
- Cool on baking sheet, finish on rack. Decorate as desired.
Notes
Chill dough for a thicker, chewier cookie. Add nutmeg or cloves for deeper spice. Freeze dough or baked cookies up to 3 months for holiday prep.
