Description

Ingredients

  • ¾ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 egg
  • ¼ cup molasses
  • 2½ cups all-purpose flour
  • 2 tsp baking soda
  • ½ tsp salt
  • 1 tsp cinnamon
  • ½ tsp ground ginger


Instructions

  1. Preheat oven to 350°F (175°C).
  2. Cream butter and sugar until fluffy.
  3. Beat in egg and molasses.
  4. Whisk flour, baking soda, salt, cinnamon, and ginger separately.
  5. Mix dry and wet ingredients until dough forms.
  6. Scoop dough, roll into balls, and bake for 10–12 min—edges should set but centers remain soft.
  7. Cool on baking sheet, finish on rack. Decorate as desired.

Notes

Chill dough for a thicker, chewier cookie. Add nutmeg or cloves for deeper spice. Freeze dough or baked cookies up to 3 months for holiday prep.
