Ingredients
- 4 salmon fillets
- 2 cups fresh spinach, chopped
- 1/2 cup cream cheese, softened
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- Salt and pepper, to taste
- Lemon wedges, for serving
Instructions
- Preheat your oven to 375°F (190°C).
- Heat olive oil in a skillet over medium heat. Add minced garlic and chopped spinach, sautéing until the spinach wilts.
- In a bowl, blend the sautéed spinach with cream cheese, Parmesan, salt, and pepper until smooth.
- Make a pocket in each salmon fillet and generously stuff it with the creamy spinach mixture.
- Place the stuffed fillets on a baking sheet and bake for 15-20 minutes until the salmon flakes easily with a fork.
- Serve with lemon wedges for a bright, zesty contrast.
Notes
