Description

A delicious and nutritious salmon dish filled with creamy spinach, perfect for weeknight dinners or impressing guests.


Ingredients

  • 4 salmon fillets
  • 2 cups fresh spinach, chopped
  • 1/2 cup cream cheese, softened
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • Lemon wedges, for serving


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat olive oil in a skillet over medium heat. Add minced garlic and chopped spinach, sautéing until the spinach wilts.
  3. In a bowl, blend the sautéed spinach with cream cheese, Parmesan, salt, and pepper until smooth.
  4. Make a pocket in each salmon fillet and generously stuff it with the creamy spinach mixture.
  5. Place the stuffed fillets on a baking sheet and bake for 15-20 minutes until the salmon flakes easily with a fork.
  6. Serve with lemon wedges for a bright, zesty contrast.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. For longer storage, freeze the stuffed fillets (before baking) for up to 3 months.
