Description
A comforting slow cooker meal featuring tender chicken thighs and baby potatoes in rich garlic parmesan flavors.
Ingredients
- 4 bone-in, skin-on chicken thighs
- 1 teaspoon garlic salt
- 1 teaspoon paprika
- 1 teaspoon black pepper
- 3 cloves garlic, minced
- 3 tablespoons olive oil
- 1 pound baby potatoes, halved
- 1 cup shredded parmesan cheese
- Fresh parsley for garnish (optional)
Instructions
- In a small bowl, combine the garlic salt, paprika, and black pepper.
- Sprinkle half of the seasoning mixture over the chicken thighs.
- Heat 1 tablespoon of olive oil in a medium skillet over medium-high heat. Sear the chicken thighs skin-side down for about 2 minutes, until golden brown.
- Set seared chicken aside.
- Toss baby potatoes with the remaining seasoning mixture, minced garlic, and 2 tablespoons of olive oil.
- Arrange the seasoned potatoes in the bottom of the slow cooker.
- Place the seared chicken thighs skin-side up on top of the potatoes.
- Cover and cook on low for 6-7 hours or on high for 3-4 hours.
- Before serving, sprinkle the shredded parmesan cheese over the chicken and potatoes.
- Let the cheese melt, garnish with parsley, and serve.
Notes
Searing the chicken enhances flavor and appearance. Feel free to add other vegetables like carrots or green beans.
