Description

A comforting one-pot meal featuring chicken, potatoes, and a creamy Parmesan garlic sauce, all cooked in a slow cooker for ultimate convenience.


Ingredients

  • 2 pounds potatoes, cut into 1½- to 2-inch chunks (Yukon Gold or russets)
  • 2 tablespoons olive oil
  • 1 teaspoon kosher salt (divided)
  • 3/4 teaspoon ground black pepper (divided)
  • 1/2 teaspoon paprika
  • 2 pounds boneless, skinless chicken breasts, diced into -inch pieces
  • 1 cup creamy Parmesan garlic sauce (like Buffalo Wild Wings Parmesan Garlic Sauce)
  • 1/2 cup water or chicken stock
  • 2 cups shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese (optional)
  • 1 tablespoon chopped fresh parsley (for garnish)


Instructions

  1. Season the potatoes: In the slow cooker, toss the potato chunks with olive oil, 3/4 teaspoon salt, 1/2 teaspoon black pepper, and paprika until well coated.
  2. Add the chicken: Place diced chicken on top of the seasoned potatoes and sprinkle with the remaining salt and black pepper.
  3. Prepare the sauce: In a bowl, whisk together the Parmesan garlic sauce and water (or chicken stock) until combined.
  4. Pour and cook: Pour the sauce mixture over the chicken and potatoes. Cover and cook on high for 4 hours or low for 6 hours, until chicken is cooked through and potatoes are tender.
  5. Add the cheese: During the last 20 minutes of cooking, sprinkle shredded mozzarella and grated Parmesan over the dish, cover, and cook until melted.
  6. Garnish and serve: Sprinkle fresh parsley on top before serving hot from the slow cooker.
