Description
A quick and delicious meal of tender chicken bites and vibrant asparagus, all tossed in a rich garlic butter sauce.
Ingredients
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 bunch asparagus, trimmed and cut into 2-inch pieces
- 4 cloves garlic, minced
- 1/4 cup unsalted butter
- Juice of 1 lemon
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish, optional)
Instructions
- Prepare the chicken: Season the chicken pieces with salt and pepper.
- Cook the chicken: In a large skillet, melt half the butter over medium heat. Add chicken and cook for about 5-7 minutes or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
- Sauté the asparagus: In the same skillet, add the remaining butter. Add minced garlic and asparagus. Sauté for 2-3 minutes until the asparagus is bright green and tender-crisp.
- Combine: Return the chicken to the skillet, pour in the lemon juice, and toss everything together. Cook for another minute, allowing the flavors to meld.
- Serve: Transfer to plates, garnish with freshly chopped parsley, and relish your meal!
Notes
For maximum flavor, let the chicken marinate in lemon juice and garlic for 30 minutes before cooking.
