Ingredients

  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 bunch asparagus, trimmed and cut into 2-inch pieces
  • 4 cloves garlic, minced
  • 1/4 cup unsalted butter
  • Juice of 1 lemon
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish, optional)


Instructions

  1. Prepare the chicken: Season the chicken pieces with salt and pepper.
  2. Cook the chicken: In a large skillet, melt half the butter over medium heat. Add chicken and cook for about 5-7 minutes or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
  3. Sauté the asparagus: In the same skillet, add the remaining butter. Add minced garlic and asparagus. Sauté for 2-3 minutes until the asparagus is bright green and tender-crisp.
  4. Combine: Return the chicken to the skillet, pour in the lemon juice, and toss everything together. Cook for another minute, allowing the flavors to meld.
