A delightful combination of fudgy brownies and chewy cookies, these Browkies are an irresistible treat for any occasion.
Ingredients
- 95 g plain (all-purpose) flour
- 2 tablespoons cocoa powder
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 225 g dark chocolate (chopped)
- 56 g butter (salted or unsalted)
- 2 eggs (room temperature)
- 100 g caster or granulated sugar
- 90 g Demerara or raw sugar
- 1 teaspoon vanilla extract
- 85 g dark or milk chocolate chips
Instructions
- Preheat your oven to 160ºC (320ºF) with a fan or 170ºC (338ºF) for conventional heating and line your baking tray with parchment paper.
- In a heatproof bowl, combine the chopped dark chocolate and butter. Melt over a simmering pot of water and stir until smooth. Mix in the vanilla extract.
- In a separate bowl, beat together both types of sugar and eggs at high speed until pale and thick, about 5 minutes.
- Sift together flour, cocoa powder, baking powder, and salt in another bowl. Add chocolate chips and mix.
- Carefully fold the melted chocolate mixture into the egg and sugar mixture until combined.
- Gently fold the dry mixture into the wet ingredients until just incorporated.
- Scoop tablespoons of the batter onto the tray and bake for 12-14 minutes or until the tops are set and slightly crackled.
- Let them cool on the tray for 10 minutes before transferring to a wire rack to cool completely.
Notes
Use high-quality chocolate for the best flavor. Ensure eggs are at room temperature for a fluffier batter. Don’t overmix the dry ingredients.
