Description

A delightful combination of fudgy brownie and chewy chocolate chip cookie in one treat.


Ingredients

  • 95g plain (all-purpose) flour
  • 2 tablespoons cocoa powder
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 225g dark chocolate (chopped)
  • 56g butter (salted or unsalted)
  • 2 eggs (room temperature)
  • 100g caster sugar
  • 90g demerara sugar
  • 1 teaspoon vanilla extract
  • 85g dark or milk chocolate chips


Instructions

  1. Preheat your oven to 160ºC (320ºF) with a fan or 170ºC (338ºF) conventional. Line a baking tray with parchment paper.
  2. In a heatproof bowl, melt the dark chocolate and butter over simmering water, stirring until smooth. Add the vanilla extract and set aside.
  3. In a separate bowl, whisk together the caster sugar, demerara sugar, and eggs until light and fluffy, about 5 minutes.
  4. Sift the flour, cocoa powder, baking powder, and salt into another bowl. Gently fold in the chocolate chips.
  5. Combine the melted chocolate mixture with the whipped eggs and sugars. Fold in the dry ingredients until just combined.
  6. Drop tablespoon-sized dollops of batter onto the prepared tray, leaving space for spreading.
  7. Bake for 12–14 minutes until set on top. Allow to cool slightly before serving.

Notes

Dust with powdered sugar or serve warm with vanilla ice cream. Can be stored in an airtight container for up to three days.
