Description

These Fluffy Vegan Banana Pancakes are a delightful breakfast treat infused with the sweetness of ripe bananas, perfect for any time of the day.


Ingredients

  • 1/2 cup mashed banana (about 1 medium banana)
  • 1 cup soy milk (or any plant-based milk)
  • 2 tablespoons canola oil
  • 2 tablespoons granulated sugar
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • Optional: 1/2 teaspoon cinnamon


Instructions

  1. Mash the banana until smooth in a medium bowl.
  2. Add the soy milk, canola oil, sugar, and vanilla to the bowl and whisk until well incorporated.
  3. Gradually incorporate the flour, then sprinkle in the baking powder, salt, and cinnamon (if using), mixing gently until just combined.
  4. Heat a large griddle or non-stick pan over medium-high heat.
  5. Pour about 1/3 cup of the batter onto the griddle for each pancake.
  6. Cook until bubbles form on the surface, then flip and cook until the other side is golden brown, about 1-2 minutes.
  7. Repeat with the remaining batter.
  8. Serve hot with vegan butter, pure maple syrup, and extra banana slices.

Notes
