These Fluffy Vegan Banana Pancakes are a delightful breakfast treat infused with the sweetness of ripe bananas, perfect for any time of the day.
Ingredients
- 1/2 cup mashed banana (about 1 medium banana)
- 1 cup soy milk (or any plant-based milk)
- 2 tablespoons canola oil
- 2 tablespoons granulated sugar
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- Optional: 1/2 teaspoon cinnamon
Instructions
- Mash the banana until smooth in a medium bowl.
- Add the soy milk, canola oil, sugar, and vanilla to the bowl and whisk until well incorporated.
- Gradually incorporate the flour, then sprinkle in the baking powder, salt, and cinnamon (if using), mixing gently until just combined.
- Heat a large griddle or non-stick pan over medium-high heat.
- Pour about 1/3 cup of the batter onto the griddle for each pancake.
- Cook until bubbles form on the surface, then flip and cook until the other side is golden brown, about 1-2 minutes.
- Repeat with the remaining batter.
- Serve hot with vegan butter, pure maple syrup, and extra banana slices.
Notes
These pancakes freeze well, so prepare a batch and enjoy them later! Experiment with adding chocolate chips or nuts for additional flavor.
