Ingredients
- 2 ripe bananas
- 1 cup all-purpose flour
- 1 tablespoon sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup milk (almond or oat milk can be used as a substitute)
- 1 large egg
- 2 tablespoons melted butter
- Maple syrup for serving
Instructions
- Mash the ripe bananas until smooth.
- Whisk together the flour, sugar, baking powder, baking soda, and salt in a separate bowl.
- Mix in the milk, egg, and melted butter into the bowl with the mashed bananas.
- Add the dry ingredients to the wet mixture, stirring gently until just combined. Do not over-mix.
- Heat a non-stick skillet over medium heat. Pour in batter for each pancake, cooking until bubbles form. Flip and cook until golden brown, about 2-3 minutes per side.
- Serve warm with maple syrup drizzled on top.
Notes
Choose overly ripe bananas for the best flavor. Let the batter rest briefly before cooking for fluffier pancakes.
