Ingredients
- 1 pound ground turkey (or chicken)
- 2 cups cooked rice (white or brown)
- 1 cup mixed vegetables (like bell peppers, broccoli, and carrots)
- 1/2 cup teriyaki sauce (store-bought or homemade)
- 1 tablespoon oil (for cooking)
- Optional toppings: sesame seeds, chopped green onions, or avocado
Instructions
- Heat the oil in a large skillet over medium heat. Add the ground turkey and cook until browned, about 5-7 minutes.
- Add the mixed vegetables to the skillet and sauté until tender, around 3-4 minutes.
- Pour the teriyaki sauce into the skillet, stirring well to combine. Let it simmer for another 2-3 minutes until heated through.
- Serve the turkey mixture over a bed of rice, and garnish with your favorite toppings.
Notes
Use quinoa instead of rice for a healthier option. To store, keep leftovers in an airtight container for up to 3 days, or freeze for up to 2 months.
