Ingredients
- 1 can kidney beans, drained and rinsed
- 1 can black beans, drained and rinsed
- 1 can garbanzo beans, drained and rinsed
- 1 can green beans, drained
- 1 can wax beans, drained
- 1/2 cup diced red onion
- 1/2 cup diced bell pepper
- 1/2 cup chopped fresh parsley
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions
- In a large bowl, combine the kidney beans, black beans, garbanzo beans, green beans, and wax beans.
- Add the diced red onion, bell pepper, and parsley.
- In a separate small bowl, mix the olive oil, red wine vinegar, lemon juice, salt, and pepper until well combined.
- Pour the dressing over the bean mixture and toss gently to combine.
- Allow the salad to marinate for at least 15 minutes before serving.
