A quick and flavorful breakfast dish combining the deliciousness of pizza with hearty breakfast staples, perfect for family brunches or busy weekdays.
Ingredients
- 1 package of English muffins
- 8 eggs
- 1 lb breakfast sausage
- 8 oz mild cheddar cheese, thinly sliced
- 2 cups milk (for sawmill gravy)
- ¼ cup sausage drippings (add butter if insufficient drippings)
- ¼ cup flour (for sawmill gravy)
- ½ teaspoon salt (for sawmill gravy, or to taste)
- ¼ teaspoon pepper (for sawmill gravy, or to taste)
Instructions
- Cook the breakfast sausage in a cast iron pan over medium heat until well done. Remove the sausage but keep about ¼ cup of fat in the skillet.
- Add ¼ cup of flour to the reserved drippings and stir over medium heat for 5 to 10 minutes, until golden.
- Gradually add 2 cups of milk to your roux, stirring constantly until it thickens and boils.
- Lightly toast the English muffins until golden brown.
- Scramble the eggs in a non-stick skillet, adding a small dash of milk for fluffiness.
- Turn on the oven broiler to high. On a baking sheet, spread the sawmill gravy over the toasted English muffins. Top each with scrambled eggs, a slice of cheddar cheese, and the cooked sausage.
- Broil in the oven until the cheese is bubbly and melted, about 2-3 minutes.
Notes
To customize, you can add diced bell peppers or onions to the sausage, or use different cheeses. Consider making a vegetarian version by omitting the sausage.
