- 1 teaspoon vanilla extract
Instructions
- Toast the coconut in a skillet over medium heat for 3-5 minutes until golden and fragrant. Let cool.
- In a large bowl, combine oats, toasted coconut, peanut butter, ground flaxseed, chocolate chips, honey, chia seeds, and vanilla extract. Stir until well combined.
- Cover the bowl and refrigerate for 1-2 hours to chill and firm up the mixture.
- Once chilled, roll the mixture into 1-inch balls. If too dry, add more peanut butter.
- Store energy bites in an airtight container in the refrigerator for up to 1 week or freeze for up to 3 months.
