Description

A classic, no-yeast quick bread that is moist, lightly sweet, and perfect for any time of the day.


Ingredients

  • 2 cups white granulated sugar
  • 4 cups all-purpose flour
  • 2 tablespoons baking powder
  • 1 teaspoon salt
  • 2 large eggs
  • 2 cups milk
  • ⅔ cup vegetable oil (or canola oil/melted butter)


Instructions

  1. Preheat the oven to 350°F (175°C) and grease 6 miniature loaf pans or 2 standard 1-pound loaf pans.
  2. In a medium bowl, whisk together the flour, sugar, baking powder, and salt; set aside.
  3. In a large mixing bowl, beat the eggs, milk, and vegetable oil on low speed until combined.
  4. Gradually add the dry ingredients to the wet mixture and stir until just incorporated.
  5. Pour the batter into prepared pans, filling each about 1 inch from the top and optionally sprinkle sugar on top.
  6. Bake for 40 minutes (for mini loaves) or 50 minutes (for large loaves), or until a toothpick inserted in the center comes out clean.
  7. Allow to cool slightly before slicing, and serve warm or with a glaze if desired.

Notes

Spoon flour into the measuring cup for accuracy. Avoid overmixing for fluffy bread. Use toothpick to test for doneness.
