Description

Ingredients

  • 1 cup long-grain white rice
  • 2 cups vegetable broth
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • Salt, to taste
  • Optional: diced tomatoes, bell peppers, or peas


Instructions

  1. Heat the oil in a medium saucepan over medium heat.
  2. Add the onions and garlic, cooking until soft and fragrant, about 2-3 minutes.
  3. Stir in the rice, allowing it to toast for about 2 minutes.
  4. Sprinkle in cumin, paprika, and salt, mixing well to coat the rice.
  5. Add the vegetable or chicken broth, stirring to combine.
  6. Increase the heat until boiling, then reduce to low.
  7. Cover the pot and let the rice cook for 18-20 minutes until tender.
  8. Remove from heat, let sit covered for a few minutes, then fluff with a fork before serving.
