Instructions
- Heat the oil in a medium saucepan over medium heat.
- Add the onions and garlic, cooking until soft and fragrant, about 2-3 minutes.
- Stir in the rice, allowing it to toast for about 2 minutes.
- Sprinkle in cumin, paprika, and salt, mixing well to coat the rice.
- Add the vegetable or chicken broth, stirring to combine.
- Increase the heat until boiling, then reduce to low.
- Cover the pot and let the rice cook for 18-20 minutes until tender.
- Remove from heat, let sit covered for a few minutes, then fluff with a fork before serving.
