Description

A quick and satisfying dish that combines crunchy tortilla chips, tender chicken, gooey cheese, and zesty BBQ sauce; perfect for game nights or casual gatherings.


Ingredients

  • 3 cups cooked shredded chicken
  • 3 cups BBQ sauce (your choice!)
  • 1 large bag tortilla chips
  • 2 cups shredded Monterey Jack or cheddar cheese
  • 1/3 cup chopped red onion
  • 1/2 cup mild pickled jalapenos
  • 1/2 cup queso blanco
  • 1/4 cup chopped cilantro (optional)


Instructions

  1. Preheat your oven to 350°F (175°C) and line a large baking sheet with parchment paper or a silicone baking mat.
  2. Mix the cooked shredded chicken with BBQ sauce until thoroughly combined.
  3. Layer half of the tortilla chips, topped with half of the BBQ chicken mixture and half of the shredded cheese on the prepared baking sheet.
  4. Repeat the layering with the remaining chips, BBQ chicken, and cheese.
  5. Sprinkle chopped red onion and pickled jalapenos on top, if desired.
  6. Bake in the preheated oven for 11-13 minutes or until the cheese is melted and bubbly.
  7. Remove from the oven and drizzle with queso and additional BBQ sauce. Return to the oven for another 3-4 minutes.
  8. Serve immediately, garnished with chopped cilantro and any additional toppings you desire. Enjoy!

Notes

Try using rotisserie chicken for an even quicker option. Pair with dipping sides like sour cream or guacamole.
