Description

A delightful one-pan salmon dish in a rich coconut curry sauce, perfect for busy weeknights.


Ingredients

  • 2 salmon fillets
  • 1 can coconut milk
  • 2 tablespoons red curry paste
  • 1 tablespoon fish sauce
  • 1 tablespoon brown sugar
  • 1 teaspoon lime juice
  • 1 tablespoon vegetable oil
  • Cooked rice for serving
  • Fresh cilantro for garnish


Instructions

  1. Heat the vegetable oil in a pan over medium heat.
  2. Season the salmon fillets with salt and pepper. Sear them for about 4-5 minutes on each side until cooked through. Remove and set aside.
  3. Add the red curry paste to the same pan. Stir-fry for about a minute until fragrant.
  4. Pour in the coconut milk, fish sauce, brown sugar, and lime juice. Stir to combine.
  5. Simmer the sauce for a few minutes until it’s slightly thickened.
  6. Return the salmon to the pan. Spoon the sauce over the fillets and heat through for another minute.
  7. Serve hot over cooked rice and garnish with fresh cilantro.

Notes

Feel free to substitute salmon with cod or tilapia. Coconut milk can be replaced with cream for a richer sauce.
