Ingredients

  • 1 pound asparagus (ends trimmed)
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon balsamic vinegar (adjust to taste)
  • Salt, to taste
  • Freshly ground black pepper, to taste


Instructions

  1. Preheat your oven to 350°F (180°C).
  2. Take a piece of the asparagus, hold both ends, and gently snap it to determine where to trim the woody part.
  3. Trim the remaining asparagus to match the size of the snapped piece.
  4. Place the asparagus in a large resealable bag or plastic container.
  5. Drizzle in the olive oil and balsamic vinegar, then season with salt and pepper.
  6. If time allows, let the asparagus marinate for 10 to 15 minutes.
  7. Spread the asparagus onto a baking sheet, making sure they are spaced apart.
  8. Roast for approximately 20 minutes, or until they reach your desired tenderness.
  9. Add a final drizzle of balsamic vinegar just before serving.
