Ingredients
- 4 cups rhubarb, chopped
- 1 cup sugar
- 1 cup all-purpose flour
- 1 cup rolled oats
- 1/2 cup brown sugar
- 1/2 cup butter, melted
- 1 teaspoon ground cinnamon
- Vanilla ice cream (for serving)
Instructions
- Preheat your oven to 350°F (175°C).
- Combine the chopped rhubarb with sugar in a mixing bowl. Transfer this mixture to a greased baking dish.
- Blend together flour, oats, brown sugar, melted butter, and ground cinnamon in another bowl until crumbly.
- Distribute the topping evenly over the rhubarb mixture.
- Bake in the preheated oven for 45 minutes or until the topping is golden brown.
- Serve warm, with a scoop of vanilla ice cream on top.
Notes
For out-of-season rhubarb, substitute with thawed and drained frozen rhubarb for best results.
