Description

Ingredients

  • 4 cups rhubarb, chopped
  • 1 cup sugar
  • 1 cup all-purpose flour
  • 1 cup rolled oats
  • 1/2 cup brown sugar
  • 1/2 cup butter, melted
  • 1 teaspoon ground cinnamon
  • Vanilla ice cream (for serving)


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the chopped rhubarb with sugar in a mixing bowl. Transfer this mixture to a greased baking dish.
  3. Blend together flour, oats, brown sugar, melted butter, and ground cinnamon in another bowl until crumbly.
  4. Distribute the topping evenly over the rhubarb mixture.
  5. Bake in the preheated oven for 45 minutes or until the topping is golden brown.
  6. Serve warm, with a scoop of vanilla ice cream on top.

Notes

For out-of-season rhubarb, substitute with thawed and drained frozen rhubarb for best results.
