Description

A nostalgic dessert featuring caramelized pineapple slices and cherries atop a rich, buttery cake.


Ingredients

  • 1 can of pineapple slices
  • 1/4 cup butter
  • 1 cup brown sugar
  • Maraschino cherries
  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup milk
  • 1/2 cup vegetable oil
  • 3 eggs
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Melt the butter in a round cake pan in the oven. Sprinkle brown sugar evenly over the melted butter.
  3. Arrange the pineapple slices atop the sugar mixture and place a maraschino cherry in the center of each slice.
  4. Combine the flour, granulated sugar, baking powder, and salt in one mixing bowl. In another bowl, whisk together the milk, vegetable oil, eggs, and vanilla extract.
  5. Mix the wet ingredients with the dry ingredients and stir until smooth.
  6. Pour the batter over the pineapple and cherries in the cake pan, spreading it evenly.
  7. Bake for 35 to 40 minutes, or until a toothpick inserted into the center comes out clean.
  8. Cool for a few minutes, then carefully invert onto a serving plate.

Notes

Serve warm with vanilla ice cream or whipped cream for extra indulgence. For a twist, sprinkle toasted coconut flakes on top.
