A nostalgic dessert featuring caramelized pineapple slices and cherries atop a rich, buttery cake.
Ingredients
- 1 can of pineapple slices
- 1/4 cup butter
- 1 cup brown sugar
- Maraschino cherries
- 1 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup milk
- 1/2 cup vegetable oil
- 3 eggs
- 2 teaspoons baking powder
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C).
- Melt the butter in a round cake pan in the oven. Sprinkle brown sugar evenly over the melted butter.
- Arrange the pineapple slices atop the sugar mixture and place a maraschino cherry in the center of each slice.
- Combine the flour, granulated sugar, baking powder, and salt in one mixing bowl. In another bowl, whisk together the milk, vegetable oil, eggs, and vanilla extract.
- Mix the wet ingredients with the dry ingredients and stir until smooth.
- Pour the batter over the pineapple and cherries in the cake pan, spreading it evenly.
- Bake for 35 to 40 minutes, or until a toothpick inserted into the center comes out clean.
- Cool for a few minutes, then carefully invert onto a serving plate.
Notes
Serve warm with vanilla ice cream or whipped cream for extra indulgence. For a twist, sprinkle toasted coconut flakes on top.
