Ingredients
- 1 cup puffed rice cereal
- 1 cup chocolate chips
- 1/2 cup peanut butter or almond butter
- 1/4 cup maple syrup or agave syrup
- 1/2 teaspoon vanilla extract
Instructions
- In a large bowl, combine your puffed rice cereal and chocolate chips, mixing them together gently.
- In a microwave-safe bowl, blend the peanut butter (or almond/sunflower butter), maple syrup, and vanilla extract. Heat in the microwave for 30 seconds.
- Stir the mixture until it becomes smooth and creamy.
- Pour the peanut butter blend over the cereal and chocolate chips. Mix thoroughly until everything is coated evenly.
- Line a baking tray with parchment paper, then drop spoonfuls of the cookie mixture onto the tray.
- Refrigerate for at least 30 minutes, allowing the cookies to set.
