Bite-sized meatloaf muffins that are flavorful, simple to prepare, and perfect for family meals.
Ingredients
- 1 lb ground beef or ground turkey
- 1 cup breadcrumbs
- 1/2 cup onion, finely chopped
- 1/2 cup milk
- 1 egg
- 1/4 cup ketchup
- 2 tbsp Worcestershire sauce
- Salt and pepper to taste
- Homemade BBQ sauce for topping
Instructions
- Preheat your oven to 350°F (175°C).
- Mix together the ground beef (or turkey), breadcrumbs, chopped onion, milk, egg, ketchup, Worcestershire sauce, salt, and pepper in a large bowl until well combined.
- Grease a muffin tin lightly with cooking spray.
- Fill each muffin cup with the meat mixture, pressing gently to pack it in.
- Bake for 20-25 minutes, or until the muffins are cooked through.
- Remove from the oven and top each muffin with your homemade BBQ sauce.
- Serve warm and enjoy!
Notes
Leftovers can be stored in the refrigerator for 3-4 days or frozen for longer storage.
