Description

A flavorful and fluffy Mexican rice dish that’s perfect for any occasion, easy to make and kid-approved.


Ingredients

  • 2 cups long-grain white rice
  • 4 cups chicken or vegetable broth
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt to taste
  • 1 cup diced tomatoes
  • Fresh cilantro for garnish


Instructions

  1. Rinse the rice under cold water until the water runs clear to remove excess starch.
  2. Heat olive oil in a large pan over medium heat. Add chopped onions and minced garlic, sauté until soft and translucent.
  3. Stir in the rinsed rice along with cumin, chili powder, and a pinch of salt. Cook for 2-3 minutes until the rice is lightly toasted and fragrant.
  4. Pour in the broth and diced tomatoes, and bring to a boil.
  5. Once the mixture reaches a boil, reduce the heat to low. Cover and simmer for 18-20 minutes, or until the rice is tender and the liquid has been absorbed.
  6. Remove from heat, let it sit for 5 minutes, then fluff with a fork. Garnish with fresh cilantro before serving.

Notes

For added flavor, try adding a bay leaf to the broth or toss in a diced jalapeño for spicier rice.
