A flavorful and fluffy Mexican rice dish that’s perfect for any occasion, easy to make and kid-approved.
Ingredients
- 2 cups long-grain white rice
- 4 cups chicken or vegetable broth
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt to taste
- 1 cup diced tomatoes
- Fresh cilantro for garnish
Instructions
- Rinse the rice under cold water until the water runs clear to remove excess starch.
- Heat olive oil in a large pan over medium heat. Add chopped onions and minced garlic, sauté until soft and translucent.
- Stir in the rinsed rice along with cumin, chili powder, and a pinch of salt. Cook for 2-3 minutes until the rice is lightly toasted and fragrant.
- Pour in the broth and diced tomatoes, and bring to a boil.
- Once the mixture reaches a boil, reduce the heat to low. Cover and simmer for 18-20 minutes, or until the rice is tender and the liquid has been absorbed.
- Remove from heat, let it sit for 5 minutes, then fluff with a fork. Garnish with fresh cilantro before serving.
Notes
For added flavor, try adding a bay leaf to the broth or toss in a diced jalapeño for spicier rice.
