A quick and delicious Mexican Rice recipe that infuses fluffy rice with vibrant flavors, perfect for any meal.
Ingredients
- 2 cups white rice
- 4 cups vegetable or chicken broth
- 1 tablespoon olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 bell pepper, diced
- 1 can (14.5 oz) diced tomatoes
- 1 teaspoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Rinse the rice under cold water until the water runs clear.
- In a large saucepan, heat the olive oil over medium heat.
- Add the chopped onion and bell pepper; sauté for about 3-4 minutes until softened.
- Stir in the minced garlic and cook for an additional minute.
- Add the rinsed rice to the saucepan, toasting it for about 2 minutes.
- Stir in the canned diced tomatoes, broth, chili powder, cumin, salt, and pepper.
- Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for about 20 minutes, or until the rice is tender and the liquid is absorbed.
- Fluff the rice with a fork and garnish with fresh cilantro before serving.
Notes
Feel free to substitute brown rice or quinoa for a healthier twist. For extra flavor, sauté the rice in olive oil for a few extra minutes before adding the liquids.
