Description

A quick and delicious Mexican Rice recipe that infuses fluffy rice with vibrant flavors, perfect for any meal.


Ingredients

  • 2 cups white rice
  • 4 cups vegetable or chicken broth
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 can (14.5 oz) diced tomatoes
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Fresh cilantro for garnish


Instructions

  1. Rinse the rice under cold water until the water runs clear.
  2. In a large saucepan, heat the olive oil over medium heat.
  3. Add the chopped onion and bell pepper; sauté for about 3-4 minutes until softened.
  4. Stir in the minced garlic and cook for an additional minute.
  5. Add the rinsed rice to the saucepan, toasting it for about 2 minutes.
  6. Stir in the canned diced tomatoes, broth, chili powder, cumin, salt, and pepper.
  7. Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for about 20 minutes, or until the rice is tender and the liquid is absorbed.
  8. Fluff the rice with a fork and garnish with fresh cilantro before serving.

Notes

Feel free to substitute brown rice or quinoa for a healthier twist. For extra flavor, sauté the rice in olive oil for a few extra minutes before adding the liquids.
