Transform ordinary chicken into a fiesta of flavors with this easy Mexican chicken marinade, perfect for grilling, baking, or sautéing.
Ingredients
- 2 tablespoons olive oil
- 2 tablespoons lime juice
- 2 cloves garlic, minced
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon cayenne pepper (optional for extra heat)
- 1 pound chicken (breasts or thighs)
Instructions
- Whisk together the olive oil, lime juice, minced garlic, chili powder, cumin, smoked paprika, salt, black pepper, and cayenne pepper in a medium bowl.
- Place the chicken in a resealable bag or shallow dish. Pour the marinade over the chicken, ensuring it’s fully coated.
- Seal the bag or cover the dish tightly and refrigerate. Allow the chicken to marinate for at least 60 minutes, or up to overnight for deeper flavor.
- Preheat your grill to medium-high heat.
- Remove the chicken from the marinade, shaking off any excess. Grill the chicken for 6-8 minutes per side, or until cooked through (internal temperature of 165°F).
- Let the chicken rest for a few minutes before slicing. Serve and enjoy!
