Description

Fluffy and light pancakes perfect for quick breakfasts or lazy brunches.


Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup buttermilk (or milk plus a splash of vinegar or lemon juice)
  • 1 large egg
  • 2 tablespoons melted butter (plus extra for greasing)
  • Butter and syrup for serving
  • Fresh fruit for topping (optional)


Instructions

  1. In a mixing bowl, blend the flour, sugar, baking powder, baking soda, and salt.
  2. In another bowl, whisk vigorously to combine the buttermilk, egg, and melted butter.
  3. Pour the wet mixture into the dry ingredients, stirring gently until just combined—lumps are okay, but don’t overmix!
  4. Preheat a skillet over medium heat and lightly grease it with butter.
  5. For each pancake, pour 1/4 cup of batter onto the skillet.
  6. Cook until bubbles start to form on the surface, then flip and cook until both sides are golden brown.
  7. Remove from the skillet and serve immediately with butter, syrup, and fresh fruit.

Notes

For fluffiest pancakes, let the batter rest for 5-10 minutes before cooking.
