Ingredients
- 1 cup all-purpose flour
- 2 tablespoons sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup buttermilk (or milk plus a splash of vinegar or lemon juice)
- 1 large egg
- 2 tablespoons melted butter (plus extra for greasing)
- Butter and syrup for serving
- Fresh fruit for topping (optional)
Instructions
- In a mixing bowl, blend the flour, sugar, baking powder, baking soda, and salt.
- In another bowl, whisk vigorously to combine the buttermilk, egg, and melted butter.
- Pour the wet mixture into the dry ingredients, stirring gently until just combined—lumps are okay, but don’t overmix!
- Preheat a skillet over medium heat and lightly grease it with butter.
- For each pancake, pour 1/4 cup of batter onto the skillet.
- Cook until bubbles start to form on the surface, then flip and cook until both sides are golden brown.
- Remove from the skillet and serve immediately with butter, syrup, and fresh fruit.
Notes
For fluffiest pancakes, let the batter rest for 5-10 minutes before cooking.
