Ingredients
- 1 pound of chicken (boneless and skinless)
- 4 cups of chicken broth
- 2 cups of mixed vegetables (carrots, peas, corn)
- 1 cup of milk
- 2 cups of all-purpose flour
- 1 tablespoon of baking powder
- 1 teaspoon of salt
- 1/4 cup of butter (melted)
- 1 large egg
- 1/2 teaspoon of black pepper
Instructions
- In a large pot, bring the chicken broth to a boil. Add the chicken and let it cook for about 20 minutes until fully cooked. Once done, take the chicken out, shred it, and return it to the pot.
- Toss in the mixed vegetables and let them simmer in the broth for 5-7 minutes until tender.
- In a separate mixing bowl, combine the flour, baking powder, and salt.
- In another bowl, mix the milk, melted butter, and egg. Pour this mixture into the dry ingredients and stir until just combined.
- Drop spoonfuls of the dumpling batter into the bubbling broth. Lower the heat to a simmer, cover the pot, and let them cook for 10-15 minutes until fluffy and cooked through.
