Description

Delicious garlic grilled shrimp that are quick to prepare and packed with flavor, perfect for casual dinners or special occasions.


Ingredients

  • ¼ cup olive oil
  • 2 tablespoons fresh lemon juice
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper
  • 2 tablespoons chopped fresh parsley
  • 3 cloves garlic, minced
  • pounds raw jumbo shrimp (21-25 count size), thawed, peeled and deveined with tails on
  • Skewers (metal or wooden)
  • 1 lemon, halved


Instructions

  1. Make the marinade: In a medium bowl, combine the olive oil, lemon juice, salt, black pepper, chopped parsley, and minced garlic. Whisk until well combined.
  2. Marinate the shrimp: Add the shrimp to the bowl with the marinade and toss until evenly coated. Let them sit for 15 to 20 minutes.
  3. Prep your skewers: If using wooden skewers, soak them in water for at least 30 minutes. Metal skewers can be used straight away.
  4. Thread the shrimp onto skewers: Remove the shrimp from the marinade and thread them onto the skewers.
  5. Prepare the grill: Preheat your grill to medium-high heat. Clean and oil the grates to prevent sticking.
  6. Grill the shrimp: Place the skewers on the grill and cook for 2 to 3 minutes on the first side without moving them.
  7. Flip and finish: Turn the skewers over and grill for another 2 to 3 minutes until the shrimp are opaque and pink.
  8. Serve immediately: Transfer to a platter and drizzle with fresh lemon juice.

Notes

Avoid over-marinating the shrimp as the acid from the lemon juice can start to cook them. Watch cooking times carefully to prevent tough shrimp.
