Ingredients

  • 1 pound chicken breast (or thighs, boneless)
  • 4 cups chicken broth
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh herbs (like thyme or parsley) for garnish


Instructions

  1. In a large pot, add the chicken, broth, carrots, celery, onion, and garlic. Season with salt and pepper.
  2. Bring the mixture to a rolling boil over medium-high heat.
  3. Once boiling, reduce the heat to low and let it simmer for about 30 minutes, or until the chicken is cooked through.
  4. Remove the chicken, shred it with two forks, and return it to the pot.
  5. Taste and adjust seasoning as necessary before serving hot.
