A warm and comforting chicken soup that’s easy to make and perfect for chilly evenings.
Ingredients
- 1 pound chicken breast (or thighs, boneless)
- 4 cups chicken broth
- 2 carrots, diced
- 2 celery stalks, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- Salt and pepper to taste
- Fresh herbs (like thyme or parsley) for garnish
Instructions
- In a large pot, add the chicken, broth, carrots, celery, onion, and garlic. Season with salt and pepper.
- Bring the mixture to a rolling boil over medium-high heat.
- Once boiling, reduce the heat to low and let it simmer for about 30 minutes, or until the chicken is cooked through.
- Remove the chicken, shred it with two forks, and return it to the pot.
- Taste and adjust seasoning as necessary before serving hot.
Notes
For added flavor, consider roasting the chicken first. Soup can be made a day in advance for deeper flavors.
